Crab Bisque

Ingredients:

    1/4 cup chopped onion (1/4C)
    2/3 tsp olive oil (2F)
    1 c. skim or 1% milk (1P, 1C)
    1 tsp. cornstarch (1/4C)
    3 oz. crab or imitation crab (2P)
    1/8 tsp. pepper
    Salt to taste

Directions:

    Sauté onion in olive oil till soft and translucent.

    Mix cornstarch in cold milk then add to onion.

    Heat and stir until thickened slightly.

    Add salt & pepper. Stir in crab and heat through.
